Calamari Fritti

Ingredients

1 pound of cleaned squid tubes
2/3 cup of flour
cup fresh italian parsley sprigs
1/2 teasp salt
1/4 teasp white pepper

Preparation

Pulsate flour and seasoning in food processor.

Cut squid tubes in rings 1/2 inch thick. Tentacles can also be used if desired. Dry squid on paper towels. Lightly mix squid rings .with the coating, removing excess flour. Heat corn oil in pan with high sides about 2 inches deep to at least 375 degrees. Fry is 2 batches till light brown and crisp...4-6 minutes. Drain on paper toweling and serve.
