Parisian Cucumbers

Ingredients

3 cucumbers, peeled and thinly sliced,=
1 fresh flat-leaf parlsey sprig, chopped
1 fresh chervil sprig, chopped
1 garlic clove, finely chopped
juice of 1 lemon, strained
1 teaspoon Dijon mustard
1/2 cup olive oil

Preparation

Put the cucumber slices in a colander, sprinkle with salt and let drain for 30 minutes. Rinse, drain, pat dry and put in a salad bowl.

Add the parsley, chervil, and garlic.

Combine the lemon juice, mustard and olive oil in a bowl, season with salt and pepper and pour the dressing over the cucumbers.

Toss well and serve.
