Budget and Picky-Eater Friendly: Rustic Cauliflower Bake

If you'd asked me last year what I thought of cauliflower I would have wrinkled up my nose and exclaimed, "Boring!" But I've changed my tune and I now love cauliflower. What changed my mind (or should I say palate)? The preparation. Yes, cauliflower can be the most bland vegetable when eaten raw or steamed. But when it's roasted, grilled, or baked with herbs, spices - and, yes, cheese - it can be sublime.

Try this Rustic Cauliflower Bake. A creamy, cheesy casserole-type dish with a crisp buttery topping. Even your picky eater (and your pocketbook) will smile!

Rustic Cauliflower Bake

Other simple and great cauliflower preparations:
1. In a bowl, toss florets with olive oil until well-coated. Mix in some cumin, turmeric, and sea salt. Roast at 350 until tender.

2. In a bowl, toss florets with olive oil until well-coated. Grate a generous amount of Parmesan cheese, add some dried thyme, and toss to incorporate. Roast at 350 until tender.

I agree, Sheri. I thought cauliflower to be a bland veggie until I began roasting it until it turned a bit sweet. Delicious!
