Molecular Chocolate Mus

Ingredients

200 grams chocolate
25 grams sugar
180 grams favorite fruit juice (if you like you can flavor it with some liquor or brandy,

Melt the chocolate with the juice with the sugar

When melted, beat the mixture over an ice bath (I use crashed ice and water)

You need around five minutes to get the consistence and color of the chocolate mus
