Pizza With Kohlrabi, Mushrooms & Chevre

Ingredients

recipe home made or store bought pizza crust
1 teaspoon oil - for cooking greens
1 bunch kohlrabi greens, trimmed from bulbs, washed, dried and chopped roughly
3 cloves crushed garlic (use less if you like)
1 heaping spoonful of chevre (also known as goat cheese)-or 1/3 of a 4oz package.
Salt/Pepper to taste.
1 package mushrooms, sliced, sauted with butter.
1 teaspoon virgin olive oil - for drizzle

Add greens to a pan with one tsp of oil, and let them wilt (you'll know, they turn the most amazing shade of green...). Once the greens are wilted (1-3 minutes), add the garlic and stir constantly being careful not to burn the garlic. Once that's fragrant, add the chevre and stir to combine. Taste first, then add salt if needed. My chevre was quite salty and didn't need more salt. Use as a topping for flat bread, pizza or just a side. Follow pizza dough recipe instructions for baking time/temp. Roll out dough, add mushrooms, and kohlrabi. Once pizza is baked, drizzle with virgin olive oil. (avoid cooking virgin olive oil, it neutralizes many of it's omega 3 health benefits).

I made this because I kept seeing an unfamiliar veggie at the farmer's market. I wanted to know what it was, but I knew I would never look into it if I didn't buy it. Once it was in the crisper drawer I'd be forced to prepare it and consume it. So glad I did. The greens are excellent with chevre, and the roots are great roasted or pan "fried." I got my boys to try it by showing them the "store wars" video, where kohlrabi's were veggies at the bar.
