Best Ever Grilled Tomato Soup

Ingredients

2 packets mixed red and yellow cherry tomatoes (all cut half)
2 red onions, cut half (or plain onions)
3 bay leaves
Salt and ground pepper
4 cups chicken stock (preferable fresh)
Fresh cream: optional - I dont use, just not necessary with this soup

Preparation

Put all ingredients in a roasting tray (except cream and stock). Leave the red pepper whole and leave garlic with skin on.

Mix well with the olive oil

Roast at 180 deg

Remove leaves and stems of thyme and cut open red pepper removing pips and cut it into pieces

Place in a pot.

Add chicken stock, bring to the boil and then simmer for 15 minutes.

Serve with (a dash of cream and) a sprinkle of fresh basil (optional)

About

The roasted tomatoes with olive oil and herbs give this soup an unbelievable flavour. Its a no-fail soup. You dont really need yellow tomatoes, just use red instead. Toss occasionally while roasting. DONT add sugar, its sweet enough!
