Zomppa's Bannock

Ingredients
3 cups of flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons heaping sugar (if you like it sweet)
1/2 cup of vegetable shortening (or lard)
2 cups of buttermilk or canned milk
Preparation

Heat a skillet or pan over medium-high heat.

Add oil (vegetable, canola, etc), butter, shortening. I used very little oil—maybe 1 tsp. Lower the heat to medium.

Combine all dry ingredients and shortening and mix well.

Then slowly add in the milk until a manageable dough is formed.

Shape balls of dough depending on how large you want the bread.

Then flatten the balls into pancakes about ½ inch thick.

Place in the pan and allow each side to brown, cooking each side for about 8 minutes or until fully cooked.
