Herbful Pasta Salad With Mushrooms

Ingredients

1 tablespoon olive oil
1 clove garlic, finely chopped
salt & freshly ground black pepper
Dressing
juice of 1/2 lemon
2 tablespoons balsamic vinegar
salt & freshly ground black pepper

Preparation

Cook the pasta until al dente and then rinse in cold water, to cool and stop the cooking process. Leave to drain.

Saute the mushrooms in the olive oil and garlic, until soft, then season.

Whizz up the dressing ingredients.

Transfer the pasta to a large bowl, mix in the mushrooms and coat with the herb dressing.

This is a lovely light and zesty pasta salad, complemented by the earthy tones of the mushrooms.
