Quinoa Butterscotch Craisin Cookies

Ingredients

1/2 cup brown sugar
2 teaspoons vanilla
1 tablespoon ground flax seed
3 tablespoons almond milk
3/4 cup of Quinoa
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup craisins

Preparation

Grind up quinoa in blender. Next grind up rolled oats in blender. Mix together quinoa, rolled oats, flour, baking soda, baking powder, and salt in bowl.

In separate bowl mix together safflower oil, sugars. Add flax seed, almond milk and vanilla.

Add dry ingredients to wet ingredients slowly, may need a tablespoon of almond milk if too dry.

Add in butterscotch chips and craisins, mix well.

Drop a heaping Tsp of batter on greased baking sheet.

Bake for 8-10 minutes, I did less to make them soft and chewy. Can make about 30 cookies.
