Petites Madeleines

Ingredients

1/8 teaspoon baking soda (2 pinches)
1/2 cup sugar

Preparation

In a mixing bowl beat the eggs, 1/2 cup sugar, and pinch of salt, until light and fluffy.

Sift the flour and baking soda and fold into the wet ingredients.

Fold in the melted butter and lemon zest.

Spoon into prepared fluted tins, making sure not to over fill.

Bake in a preheated 350ยบ F oven for 12-15 minutes or until golden. Makes 24
