Petit Beurre Pie

Ingredients

Four packets petit beurre cookies(depending on how big you want the pie to be)
A coffee can filled with cold coffee
250 grams soft butter
100 grams powdered sugar (adjust depending on how sweet you want to make the pie)
A pack chocolate sprinkles.

Preparation

Make the butter cream: Mix the butter with the powdered sugar in a bowl. Make sure you mix everything properly and that you can smear the butter easily.

Start with the first layer: Dip each cookie in the coffee, until it is thoroughly soaked, and lay them on a platter to form a big rectangle.

Smear the first layer with a thin layer butter cream.

Repeat the process by forming another layer of soaked cookies on the previous one.

Finish with a layer of unbuttered cookies on top.

Make sure that you have some butter cream left, or make some extra. Smear the entire pie and make sure that the layer is nice and smooth, otherwise it looks very ugly. Use a palette knife to do this.

Cover the pie with an even layer of chocolate sprinkles.

Put the pie in the fridge to firm up.

You can easily make this "no-bake" pie together with kids; it is quick to make and they just love it! A great treat for tea-time.
Be careful when dipping the cookies in the coffee: they must be soaked, but they can easily fall apart.
You can add cocoa powder to the butter cream for a chocolate flavour.
Leave the petit beurre pie in the fridge for the night, this way it will even taste better.
