Question: Why does freshly grated nutmeg dessicate the milk foam?

Cinnamon or chocolate sprinkled on a latte or 'cap' works well and the fully engorged foam retains it's erect peaks. However one grate of nutmeg and bam - all falls down. What is the chemical reaction or what. I've wondered this for decades!
