Rushan Cheese
About
Rushan is a cow's milk cheese of Yunnan, China. It's flat with a leathery texture and is often served fried or grilled and rolled up on a stick, often as a street food. When grilled, various sweet condiments, such as sweetened condensed milk, fruit preserved, rose infused honey and chocolate syrup, are spread on it, then rolled around a stick. The cheese changes its texture and becomes somewhat flaky.
