Arame

About

A species of kelp used in Japanese cuisine. It is a very nutritious food, ranking high in calcium, iron, iodine, vitamin A, and magnesium. Arame is sold in strands that are dark brown. It is sold dried, but can be reconstituted in about 5 minutes in water. It's served alone with a mild and slightly sweet flavor. Sometims it's served with other seaweeds in a salad or as a garnish. Because it's flavor is not overpowering, it may be used in a variety of dishes, from pilafs to muffins.
