Chef PickyKid actually tried this recipe and said, “It’s kind of okay!” which is quite a compliment coming from her!

I think there’s a misconception that quesadillas are plain and humdrum. Does THIS look plain or humdrum to you?

They aren't kidding around with this name. It's gooey. Ooey gooey. The middle is gooey, the crust is even a little gooey.

Beef Korma is a delicious curry dish slow cooked to perfection. This is best served on a bed of fluffy rice, and with poppadoms.

Tomatoes.I seriously love my tomatoes. I wait in anticipation for tomato season like no other produce season. I savor the first bite of the vine ripened tomato, I can in order to save that flavor throughout the winter, and when I occasionally need a tomato fix (to make guacamole) during the winter, I make sure I’m purchasing slave free-tomatoes (usually from Trader Joe’s or Whole Foods.)

Because of the insanely oppressive heat wave that has washed over Ontario this summer, I decided that a cool and refreshing salad was in order. And not knowing exactly what types of dietary needs the guests had, I thought that taking the gluten-free, nut-free, vegan route would be the most considerate.

I love the pairing of beef with broccoli in this dish! With only 20 minutes of marinating time for the meat, this meal is a great choice for a night when you’re a bit pressed for time.

In case you want to know what I’ve been eating every day this week, it’s this Skinny Garlic Fried Rice. I doubled the veggie amount and still loved it! It just depends on how much rice you want in with the whole thing.

I remember cafeteria lunches. In elementary school, I probably just threw most of the food out. But the real gem, when it was available, was apple crisp. Sure, you had to order it with all the not-so-great “real” food, but it was worth it for the apple crisp.

I combined unsweetened coconut flakes with some breadcrumbs and curry powder for a crunchy, sweet and spicy treat.

You may be familiar with the version using cream of mushroom, celery or chicken soup. Not my style–although I’m not averse to keeping a few cans of soup in the pantry for emergencies. I wanted a recipe that was fresh all the way.

Everyone who has seen or heard about our garden, is always so impressed that we even put one in this year. It was the first thing on my to-do list and this green bowl is the first proof that it was definitely worth our efforts.

In the summer, all the area around Naples (I grew up in Sorrento) makes fritto misto, a mixed fried antipasto that can include a variety of seafood, vegetables and herbs, deep fried in a yest batter, which goes under the name of pasta cresciuta (pastetta or pastella).

It’s no secret that I am a fan of pancakes (even more, the different syrups that go on top of pancakes!). When Rachel from the blog Rachel Cooks announced that she was devoting the entire month of July to pancakes and asked me to participate, I knew this was one event I didn’t want to miss.

Honeycomb ice cream is the very favourite flavour of a friend of ours, so this honeycomb ice cream slice, or semi-freddo, seemed a suitable house warming gift for his move into a house which already has all the kitchen gadgets, towels and cushions it could ever want.

I don’t know about you but I’m always looking for quick, easy, and Delicious when it comes to dinner. I’m not a meal planner. I’m more like a ‘feel planner’ and mostly I ‘feel’ like a stress-free glass of wine and a hot meal that doesn’t take longer then 20 minutes.

I’m a huge fan of veggies, and always looking for new ways to prepare them. Just recently, I made a ginormous salad to bring to a party and had a ton of leftover vegetables. My first thought was to simply make a salad, but then I decided that cooking them in some fashion was more appealing.

This dish was one of those. It's really tasty. That's all. I don't have any great story to go along with it. It did not come from any deep, heartfelt or nostalgic place. It came from the high stakes game of Mousetrap that is my brain.

I’m rather enamored with the partnership of corn and red peppers right now, and scheming ways to showcase them in a bajillion different summer dishes. This one right here won out.

Half way through devouring my banana concoction I realized "Aha! This would make the perfect muffin!" The wheels started turning in my head and I was determined to scour the internet for the perfect recipe. It's a good thing I found one or you wouldn't be looking at these beauties
