I must admit… I LOVE this salad and it’s pretty much been on my weekly lunch rotation ever since I first made it. Not only is it super yummy, it’s also a really healthy and colorful way to indulge in your peanut butter cravings.

This macaroni with lots of cheese went about things differently, amalgamating pasta, butter, milk and cheese into one delicious unit, rather than dousing cooked noodles with cheese sauce.

I had a big smile on my face while I was eating this soup, mainly because there was bread involved. But also because I knew there would be leftovers. I am never usually this thrilled about leftovers, but I am so glad I’ll get to have this soup for lunch tomorrow.

This Brazilian recipe of moqueca de peixe (literally fish stew) is consistent with the restrictive laws of Lent. Mainly consisting of fish and vegetables, it is enhanced with coconut milk which ideally replaces cream which would have been of animal origin.

The cute sugar plums are new to me. I like their shape, size and colours. I’ve prepared a part of them in a simple dessert, with yogurt, honey and fresh almonds. A treat on a balmy day.

Tarascan Soup is something I've been making for years. For me, Tarascan has come to imply "Mexican tomato bisque." It's such a great recipe because you can prepare it quickly and it's ready to eat in about 30 minutes.

One of my favorite things to make is a simple roast chicken, especially during the winter months. The skin of the chicken crisps up beautifully and the flavors of the poultry seep into the accompanying vegetables in the pan.

Healthy Pizza is not an oxymoron anymore with this Quinoa Crust Pizza! Hurray! Imagine all the pizza you can eat! Seriously, this pizza was so good and you really couldn’t make out that it did not have a bread crust.

I realize broccoli isn’t normally [or ever?] a taco ingredient but trust me that it works in this recipe. The bites of broccoli are possibly the very best bites you can find. They’re roasted + tender and filled with pockets of cheesy millet goodness.
