Meatless Monday: Vegetarian Chow Mein

Vegetarian chow mein from Fuss Free Cooking is a delicious dish for Meatless Monday.  Egg noodles are tossed in a rich and flavorful sauce composed of vegetarian oyster sauce, garlic, sesame oil, and soy sauce.  Vegetarian oyster sauce has a deep and complex flavor that mimics the traditional Chinese sauce.  You can purchase this meat and fish free product online or health food stores.  Feel free to add whatever veggies in your fridge to your chow mein to make it even more tasty and hearty.
1 packet of fresh noodles of your choice
A handful of bean sprouts
1 carrot, peeled and sliced
1 garlic clove, peeled and minced
1/2 tablespoon sesame oil
1 teaspoon soy sauce
1/2 teaspoon ground white pepper
Mix vegetarian oyster sauce, sesame oil, soy sauce, kicap manis , white pepper together in a bowl with 2 tbsp of water. Set aside.
Heat up pan with a little oil, then add garlic and carrots to the pan when the oil is hot. Fry until the garlic becomes aromatic.
Add noodles and seasoning mixture into the pan and mix well. Cook the noodles for 2 minutes. Add a little water if the noodles start to stick to the pan.
Add bean sprouts and mix well with the noodles. Cook further for 2 minutes or until the sprouts are soften.
Sprinkle fried shalltos and spring onion. Serve hot.
