Red Cabbage Salad with Quinoa, Blueberries & Cinnamon Walnuts

½ small organic red cabbage
1 tbsp. olive oil
2 tbsp. apple cider vinegar
1 apple, chopped ¼ inch cubes
¾ cup red quinoa
½ cup water

Healthy Blueberry Lemon Pancakes
From Peanut Butter and Peppers

1/3 Cup of Greek Lemon Yogurt (6 oz container works for the whole recipe)
2 egg Whites
1/2 tsp. Vanilla Extract
1/2 cup. White Whole Wheat Flour
1/2 tsp. Baking Soda
1/2 tsp. Sugar
1 dash salt
1/4 cup non-fat milk
1/2 cup blueberries, fresh

3 Tbsp. Lemon yogurt

Rustic Blueberry Clafoutis

⅔ Cup granulated sugar
3 eggs – room temp
½ Cup all purpose flour
½ cup heavy cream

½ teaspoon fresh grated ginger
1 tablespoon chopped fresh mint or cilantro
