Quick and Easy Spaghetti Pie

These long winter days means by the time chores and daily activities are finished, it's dark. By then, all of the family is ready to be fed and spend some time together before turning in. I like making quick and easy meals so we can get to the family time in front of the fire, so out comes my list of fast, healthy meals. Spaghetti is a family favorite, and making it into a pie just puts it into a little fancier presentation.  This recipe feels special, and will be loved by even the smallest chef. 

I actually make two for my crew. It's better the next day, and keeps together well if you can slip a piece in a lunchbox. Delish! 

Quick and Easy Spaghetti Pie

8 oz angel hair pasta
1 cup ricotta (I use my goat cheese)
1 can tomato paste (6 oz)
1 cup tomato sauce
2 tablespoons butter
cup Parmesan cheese
1 pound ground beef or sausage
2 eggs
Directions
Cook pasta, strain and mix butter,eggs and parm until blended. This is the bottom/sides of the pie
Cook ground meat until browned, drain fat and add tomato paste/sauce.Heat through.
Fill 10 inch pie plate with noodle mixture, patting up the sides a bit to make a bowl area to fill.
 
Spread ricotta cheese in the center of the noodle mixture.
Top the pie with the sauce mixture. It is very thick, and will make a mound of sauce/meat nicely.
 
 
 
 
 
Bake uncovered, at 350 degrees, for 30 minutes.
