This easy chicken tikka masala recipe is a delicious way to enjoy this favorite restaurant dish at home. All the ingredients are dumped into the crock pot and cooked low and slow for several hours. The only thought this meal requires is cooking the rice just before you're ready to serve. Slow cooker chicken tikka masala is one way to introduce your family to new foods, flavors and culture.
Chicken Tikka Masala
1/4 cup tomato paste
2 tablespoons finely chopped garlic
2 tablespoons madras curry powder
1 tablespoon finely chopped ginger
1 teaspoon ground cumin
1 medium yellow onion, sliced
1 red bell pepper, sliced
2 pounds boneless, skinless chicken thighs
salt and black pepper
1 cup long-grain Jasmine rice
1/2 cup plain yogurt
chopped fresh cilantro for garnish
naan bread to serve
In a slow cooker, whisk together the tomato paste, garlic, curry powder, ginger, cumin, and 1/2 cup water. Add the onion and bell pepper and stir to combine.
Season the chicken on both sides with salt and pepper.
Add the chicken to the slow cooker and cover to cook on low for 7 to 8 hours or on high for 3 to 4 hours.
Cook the rice according to the package directions approximately 20 minutes before serving.
Stir in the yogurt and adjust the seasoning with salt and pepper. Sprinkle with chopped cilantro. Serve with the rice and naan bread.
