When most people go on vacation they want to relax and eat out. When Barnaby and I travel we visit as many markets as we can and cook, cook, cook! We're weird, I know. On a recent family trip to Mexico our family couldn't get us out of the kitchen. Each day we were cooking up caught-that-morning red snapper, botete (a type of puffer fish), sweet shrimp bathed in tequila and garlic, and any kind of ceviche we could think of. It was glorious! Check out some of our creations below like Shrimp and Octopus Ceviche (you can use any white fish if you're not a fan of octopus), an easy Tequila Lime Shrimp, a fresh and tasty Mango Salsa, and some of our favorite authentic Mexican breakfasts such as Chilaquiles, Migas and Machaca con Huevos - all perfect for Cinco de Mayo or any day of the week.
