I love making bar cookies. They take all the nitpickiy measuring out of the equation. Call me lazy, but I like the outcome much more than the process with baking. These are the perfect treat for our holiday table. I am also not a huge fan of making traditional pie, so making cookie bars that taste just like pie is perfect!

1 cup vegetable oil
3 eggs
2 cups sugar
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground nutmeg
3 large baking apples, peeled, cored and finely chopped
6 ounces (½ a 12-ounce package) butterscotch chips
