All too often parsnips are dismissed as a boring and bland vegetable, but when roasted their wonderful flavors really shine. Like many of its root vegetable cousins it's full of good-for-you nutrients, is a great source of fiber and provides more than 1/3 of your daily dose of vitamin C. Perfect for the flu season!
