Irresistible Pink Velvet Cheesecake is a Cute Pink Treat

We absolutely adore red velvet cake, so we think this fluffy and light pink velvet cheesecake is an excellent idea. A chocolate cheesecake recipe is made pink with a drop or two of red food coloring, which would be gorgeous served with ripe strawberries or pink icing roses.

For this cheesecake recipe, you can follow the instructions to make a homemade Oreo pie crust, or you can use a store-bought chocolate crust.

Pink Velvet Cheesecake

Ingredients:
Crust
1 package of double stuffed Oreos, cookies and creme layers separated
5 tablespoons butter, melted
1 tablespoon organic white sugar

Cheesecake
8 ounces packages of cream cheese, softened to room temperature
1 1/2 cups organic white sugar
4 large eggs
3 tablespoons organic unsweetened cocoa powder
1 cup sour cream
1/2 cup buttermilk
2 teaspoons vanilla
1 teaspoon distilled white vinegar
3 ounces red food coloring

Frosting
3 ounces cream cheese, softened to room temperature
1/4 cup butter
the creme from the middle of the Oreos
1 teaspoon almond extract
1 teaspoon vanilla extract
2 cups powdered sugar
