I have a dirty little secret: our oven has been broken for about four years now. Yup, the founders of Foodista have no oven (indeed, the cobblers' children have no shoes). We've made do with our little convection toaster oven and countertop roaster during the holidays, but baking large batches of anything has been a no-can-do. Fortunately, our current kitchen remodel is changing this dilemma, but in the meantime my friend Susan passed along her easy recipe for no-bake chocolate, peanut butter and oatmeal cookies. Until our new oven is installed I can keep up the façade to my 3-year-old of being a baking mama!
These things are seriously addictive, you may just want to double the batch!
No-Bake Chocolate Peanut Butter Oatmeal Cookies

1 stick butter
2 cups sugar
1/2 cup milk
3 tablespoons cocoa powder
2/3 cup peanut butter
1 teaspoon vanilla
3 cups quick oats
In a large saucepan bring butter, sugar, milk and cocoa to a boil, stirring constantly. Cook for 2 minutes then remove from heat. Stir in peanut butter, vanilla and oats until well combined. Quickly drop teaspoonfuls onto wax paper or foil. Refrigerate until hardened.
