If your family has always wanted to try ceviche, but you worry about feeding them raw seafood, check out this refreshing recipe for a mock ceviche.
The flavors are bright, fresh, and a wonderful change from the heavy winter meals we are all becoming tired of.
1/2 cup fresh squeezed lime juice, plus 2 tablespoons
1 pound small shrimp (easy peel best)
1/4 cup white onion, chopped fine
cup cilantro, chopped
1/2 cup ketchup
1 tablespoon hot sauce (or more to taste)
2 tablespoons extra virgin olive oil
