Red Beans and Rice with Andouille Sausage Makes the Perfect Mardi Gras Meal

Mardi Gras is just around the corner and since most of us won't be able to make it to the festivities in New Orleans, we'll have to bring New Orleans to us! And what better way to recreate Mardi Gras at home than with great food? This Red Beans and Rice with Andouille Sausage recipe is a great addition to any Mardi Gras themed party. The recipe is a bit of a complicated one, taking a total of 2.5 hours to prepare. It makes a serving of eight. 

Red Beans and Rice with Andouille Sausage

Ingredients:
1 pound dried red beans
4 ounces salt pork, diced
1 pound smoked pork hocks
1 pound andouille sausage, halved lengthwise and sliced into half rounds
1 large yellow onion, diced
4 cloves of garlic, chopped
2 large stalks of celery, diced
2 green bell peppers, cored and diced
1 teaspoon of Cajun seasoning
3 bay leaves
1 teaspoon of dried thyme
2 quarts of chicken or vegetable stock
Hot sauce, to taste
Salt and ground pepper, to taste
4 cups cooked long grain white rice
2 tablespoons chopped fresh parsley
2 scallions, thinly sliced
