Zucchini is one of the most abundant and cheapest summer vegetables at the market. This zucchini carpaccio is a a super simple no-cook side dish that is great with any meal. Thin slices of zucchini are drizzled with an exceptional extra virgin olive oil and authentic Parmigiano Reggiano. Since there are so few ingredients in this dish, you'll really want to use the best you can get your hands on.
Ingredients:
2 zucchini
Salt, pepper
Virgin Olive oil
Parmigiano Reggiano
Directions:
Thinly slice the zucchini lengthwise using a mandoline.
Then get creative by placing the thin slice of zucchini on a plate, top with salt, pepper a beautiful virgin olive oil, shave some Reggiano and some fresh chopped parsley.
