Coconut Cake

Today seems like a cake day. So, coconut cake it is! What a decadent treat this is. Make it a double layer of course. Enjoy! 

Coconut Cake

1 3/4 cups flour
2 1/4 tsp baking powder
3/4 tsp salt
1/2 cup butter
1 cup sugar
2 eggs
2/3 cups milk
1 tsp vanilla
2/3 cup sweetened coconut

Sift flour, baking powder, salt

Cream butter and sugar until fluffy

Add eggs and beat well after each

Add flour mixture and milk alternately, waiting for each addition is fully incorporated before adding the next

Stir in vanilla and coconut

Pour into 2 - 8 inch round greased and floured cake pans

Bake at 350 degrees for 35 minutes

Instead of the vanilla, add 1 tsp coconut extract. The cake will be more coconutty.

What a wonderful sight! :D
It seems the perfect cake for my dad's birthday, he loves bitter-sweet cakes (if i'm to be doing this I will not add the sweetened version of coconut)...
I was wondering though what goes between the two layers? Some kind of coconut cream? What would you suggest?
