A waiter at the Ozona Blue restaurant in Pam Harbor, Fla. was preparting a double order of bananas foster, tableside when it all went terribly wrong. First the waiter dripped triple sec on the burner, which caught fire immediately.
And then, rather than adding the 151 rum with a ladle or separate glass, us used a full bottle. As the rum hit the flame it set fire and then traveled into the bottle and exploded. One 25-year-old diner, Katie Hudgens is now in the hospital recovering from thirs-degree burns. Most flambe recipes warn against pouring liquor from a full bottle, because it's likely to burst into flames.
When the fire department arrived on the scene, it was all cleaned up and the staff couldn't answer questions about the incident.
"We asked them what type of bottle it was in, and they said they didn't know," said Palm Harbor Fire Rescue spokeswoman Liz Monforti. "When we got there, everything was gone."
Let's hope Katie, who is a first-grade teacher makes a speedy recovery. She was also dining with her fiance, his parents and a close family friend.
