It wouldn't be apple pie day without a treat for the gluten free (and beyond) folks out there. To kick it up a notch, this version has been infused with chocolate!
Chocolate Apple Pie with Nut Crust
1/2 cup hazelnuts
1/2 cup Brazil nuts
1/2 cup walnuts (use your favorite combo of nuts)
1/2 tsp Himalayan salt
optional: spices for crust cinnamon, cardamom, nutmeg
1 egg, beaten
1-2 tbs maple syrup
1/3 cup dark chocolate
1/3 cup coconut milk
1/4 cup almond slivers
3 organic apples
2 tsp butter
2 oz dark chocolate, melted
2 tbs rapadura (unrefined cane sugar)
1tsp cinnamon
1/2 tsp cardamom
1/2 tsp Himalayan salt
Directions:
Crust: Blend nuts in food processor until powder. Mix nuts with egg, maple syrup, salt, and spices. Spread in a pie shell evenly and cook at 350F till the crust is golden.
Filling: Melt chocolate and mix in coconut milk until blended. Spread in the bottom of crust. Sprinkle a layer of slivered almonds. Peel and core apples and then cut in thin slices. In a pan melt the butter and add apples with sugar, salt, and cinnamon. Cook until just tender. Pour apples into the pie crust and spread evenly. Sprinkle a few sliced almonds again and swirl the remaining dark chocolate. Refrigerate 2 hours, then voila' a unique and delicious apple pie!
