It seems like the time for Thrifty Thursday is now. Many people complain that there is no way that they can eat healthy food on a budget. I'm here to challenge this notion and every Thursday I will post a recipe or two for a budget conscious nutrient dense meal. The cost of eating low quality food is beyond the pocketbook, it's your health that takes the hit. So rather than make this less than desirable compromise, let's look at how you can feed your family while nourishing the mind and body. For the first edition of Thrifty Thursday, I'm going to share my ultimate low cost foodie recipe, sardine burgers. Believe it or not, they are a delicious  source of Omega-3 fatty acids and everyone always ask for seconds!

Sho's Sardine Burgers

1 can of sardines in olive oil (per person)

1 handful chopped purple cabbage

1 tbsp Dijon mustard

2 tbsp organic corn meal (can use brown rice, quinoa, buckwheat flour)

1 tbsp coconut oil

1/2 tsp Himalayan salt

Directions: Mix everything, but the coconut oil in a bowl. Form into patties, usually about 4-5. Heat up cast iron or stainless steel skillet on low-med heat. Once hot add 1/2 coconut oil and when it melts add patties. Cook for about 10 minutes on each side, adding the rest of the oil once you flip. For extra crispy patties, keep adding oil as the pan gets dry. Enjoy!
