Red Curry

Ingredients
14 ounces can of light (or lite) coconut milk
1 tablespoon heaping of red curry paste
1 small onion
3 cloves of garlic (depending on what you like)
2 smalls red potatoes
1 teaspoon of lemon juice
1 teaspoon of Sriracha (more if you like it really spicy)
Preparation

Peel and dice onion as you like it.

Heat medium to large saucepan on low.

Add garlic and onion to pan and simmer.

Cut zucchinis, red pepper, potatoes and other vegetables if applicable.

Add vegetables to pan.

Add coconut milk, broth and curry paste and mix well.

Slice meat or tofu into bite sized pieces and add to pan.

Add Sirracha and lemon juice.

Watch to make sure it doesn't boil over.

Should be ready in 15-20 minutes.

This is a fairly easy recipe to follow, and a good one if you're just starting out. This is my variation and I'm sure there are hundreds out there. Bon appetite!
