From the kitchen of the super talented Foodista user: Angela LeMoine, this new way to eat an egg roll caught our eye and we had to share.
Filled with unusual flavors and they are even baked!
When you tackle this recipe, plan on making the Cilantro Lime Pesto as well. We can think of 50 foods that need some of that kitchen love on them as well. Nice.
Southwest Egg Rolls with Cilantro Lime Pesto
1 bunch cilantro, stems discarded
3 cloves garlic
1 heaping Tbsp sliced almonds
juice of lime, divided
olive oil
salt & pepper
12 egg roll wrappers
1 red bell pepper, small dice
