Chocolate Peppermint Skillet Cookie
¾ cup unsalted butter, room temperature
1 cup sugar
¼ tsp peppermint extract
1½ cups all-purpose flour
½ cup cocoa powder
1 tsp baking soda
½ tsp salt
½ cup chocolate chunks (or chips)
Preheat oven to 350ºF.
Using a stand mixer, cream together butter and sugar for a minute or two.
Add egg and extract and continue mixing.
Add flour, cocoa powder, baking soda and salt. Mix until combined.
Stir in the chocolate chunks.
Spray the cast iron skillet with non-stick spray. I used a 9-inch pan.
Spread the cookie batter evenly in the skillet and sprinkle with peppermints.
Bake for about 20 -25 minutes. Do not overcook.
