Coffee Ice Cream With Bittersweet Chocolate

Ice cream is easy to make, all you need is a basic custard and your favorite flavors. In this recipe, I made a coffee ice cream and stirred in some shaved bittersweet chocolate. It’s delicious without being overwhelming or sickly sweet. For the record- I have a Cusinart 2qt Ice cream maker with a freezable bowl. It’s easy to use and does a wonderful job.

  • 2 cup half and half
  • 4 large egg yolks
  • 2/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1 packet Starbucks Via Ready Brew coffee
  • 3/4 teaspoon instant espresso powder(optional)
  • 1 cup heavy cream
  • 2 ounce bittersweet chocolate, shaved

Instructions

Step 1

Prepare your ice cream maker according to the manufacturer’s directions.

Heat the half and half in a saucepan until warm, but not hot.

In a separate bowl, whisk the egg yolks until blended. Add the sugar and whisk until combined.

While whisking, slowly pour about 1/2 of the warm half and half into the egg yolk mixture.

Return the tempered egg yolk mixture to the saucepan with the remaining half and half. Whisk briskly to combine.

10-12 minutes

Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a silicone spatula.

Place the saucepan with the custard in a large bowl filled with ice water (an ice bath) to cool, stirring occasionally, until it reaches room temperature.

Add the heavy cream, coffee, and vanilla extract to the cooled custard and stir well. Pour the mixture into another container and chill until cold or ready to pour into the ice cream maker.

Freeze the custard in the ice cream maker according to the manufacturer’s directions. Once the ice cream is done freezing, stir in the shaved bittersweet chocolate.
