Caramel Matzo Crunch

Ingredients

4 Unsalted Matzo crackers
1 cup Brown Sugar, packed firm
6 ounces Semi-sweet chocolate chips

Preparation

Line a cookie sheet with foil and cover with baking parchment or waxed paper. Cover pan evenly with matzo boards, using what you need and cutting pieces to fit spaces as evenly as possible.

In a heavy saucepan, combine butter and brown sugar. Cook over medium heat, stirring constantly, for 3 to 5 minutes, until sugar dissolves. Remove from heat and pour over matzo. Bake at 375 degrees for 8-15 minutes, checking every few minutes to be sure mixture does not burn.

Remove from oven and sprinkle with chocolate chips. Let stand 5 minutes, then smear melted chocolate evenly. Chill in refrigerator until set. Break into small pieces.

This kind of reminds me of the dark chocolate Matza that is sold in our supermarket during the holidays.

Ingredients list says butter, directions say margarine. Don't use margarine!! And don't use chocolate chips!! Good dark chcolate works muuch better. (Salted matzo is really good too!)
