Sweet Potato & Okra Salad - Paleo/Gluten-Free/Vegetarian
1-2 sweet potatoes, peeled, rinsed and thinly sliced,
Handful of fresh rocket,
Handful cherry tomatoes, halved,
Handful of fresh okra, washed and roughly sliced,
1 red pepper, sliced,
1 courgette (zucchini), thinly sliced,
1 fresh lemon, sliced,
1 avocado, peeled and sliced,
Small handful of feta (optional)
Pinch Himalayan pink salt,
Splash of extra virgin olive oil,
Pinch of pepper.
In a skillet, add a small amount of oil and when hot, add the sweet potato slices. Cook for a few minutes on each side before removing and setting aside.
Place the rocket on a plate and add all other ingredients.
Toss in the olive oil, salt and pepper and a little juice squeezed from the lemon and serve.
Omit the feta for a fully vegan meal.
