Mediterranean Warm Potato Salad with a Lemon Basil Dijon Sauce

Ingredients

Warm Potato Salad
6 medium white potatoes halved
1 medium zucchini quartered
10-12 mushrooms halved
1 cup cherry tomatoes halved
1/2 cup kalamata olives
3 small white onions peeled and halved
3 tbsp extra virgin olive oil
1 tbsp fresh parsley chopped
Lemon Basil Dijon Sauce
1/2 cup dry white wine
1 shallot peeled and roughly chopped
3/4 cup vegetable broth
2 tbsp dijon mustard
1 lemon juiced
6-8 basil leaves chopped
flour water roux (1 TBSP flour and add water until thick paste forms)

Preparation

Preheat oven to 350F.

In a large bowl, combine all the cut vegetables. Drizzle with olive, salt & pepper, and parsley.

Pour into a large baking pan and bake for 40-45 minutes.

Making the Lemon Basil Dijon Sauce

In a food processor, combine shallot and mustard.

In a small pan, heat shallot and mustard mixture. Add wine and broth and bring to a simmer.

Remove from heat and add lemon juice. Thicken to your liking with the flour and water roux.

Add chopped basil leaves and combine thoroughly.
