- 1/4 cup LouAna Coconut Oil
- 1/2 cup pure maple syrup
- 1 egg
- 2 teaspoons vanilla
- 2 cups quick cooking oats
- 3/4 cup flour(optional)
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/4 teaspoons salt
- 4 ounces fresh blueberries
Instructions
Step 1
Preheat your oven to 375 degrees.
Step 2
In a large bowl mix, with a hand mixer, the coconut oil and maple syrup until well combined.
Step 3
Add the egg and vanilla and mix for about a minute until everything is well combined again.
Step 4
In a small bowl stir together the oats, flour, baking powder, cinnamon and salt.
Step 5
Add the dry ingredients into the wet and mix until just combined.
Step 6
Using a rubber spatula gently mix in the blueberries.
Step 7
Using a medium sized cookie scoop, scoop out the cookies onto a parchment lined baking sheet, about an inch apart. Sprinkle a little cinnamon over top each cookie.
Step 8
Bake for approx. 12-14 minutes.
