Berry Ice Cream Popsicles

Ingredients

2 cups vanilla ice cream {your favorite}, or substitute frozen yogurt for a healthy twist!
6 oz fresh raspberries, divided
6 oz, fresh blueberries, divided
Special Equipment: Blender or food processor.

Preparation

1
Add the ice cream & 3 oz raspberries & 3 oz blueberries to a food processor {or blender}. Pulse about 20 times until the fruit is broken up & the mixture is smooth.
2
Scoop 1 TBSP of the ice cream mixture into each of your popsicle molds. Drop a couple of blueberries in each mold. Add another tablespoon of the ice cream mixture to each mold. Now add a couple of raspberries. Then add another tablespoon of the ice cream mixture to each mold & repeat with the blueberries & then again with the raspberries {if you have room}.
3
Freeze the pops until solid {at least 4 hours}. To release the popsicles just run the molds under really warm water for 10-15 seconds. Jiggle & pull out!
4
EAT QUICKLY! Ice cream doesn't stay frozen forever! ;)
5
*NOTE: Feel free to mix blueberries & raspberries in a layer or to start your layers with raspberries instead of blueberries. It really doesn’t matter. It will taste just as good.
