Tasty Honey Oat Bran Muffins

These honey oat bran muffins are a tasty breakfast.  Packed with flavor and nutrition, these muffins are a great way to start the day.  If you want to make these muffins in advance, measure the ingredients the night before and in the morning mix them together and bake.  Raisins are optional in this recipe and you can use whatever dried fruit you prefer.  Honey oat bran muffins will give you the jumpstart you need to start your day.

Honey Oat Bran Muffins

Ingredients:

1 cup all-purpose flour
3/4 cup whole wheat flour
1 tablespoon baking powder
1 1/2 cups skim milk
1/4 cup honey
1/4 cup dark molasses (or ¼ c. black-strap molasses)
2 egg whites
3 tablespoons vegetable oil
1/2 teaspoon cinnamon (add to flour mixture)
3 cups Kellogg's Common Sense Oat Bran cereal
Raisins - ¼ c. - optional

Directions:

Stir together flours, baking powder, cinnamon and set aside.

In large mixing bowl, beat together milk, honey, molasses, egg whites and oil until thoroughly mixed. Add dry ingredients and then add Kellogg's Common Sense Oat cereal, stirring ONLY until combined. (If mixture is dry...add 1/4 cup water.)

Portion batter evenly into 12 greased (spray with Pam) 2 1/2 inch muffin-pan cups.

Bake in preheated 400 degree oven about 25 minutes or until done. Serve warm.

Yield: 12 muffins.

I wrap each muffin in plastic baggie and place in freezer. I take them out as needed and defrost in microwave for 130 seconds on defrost. Tools
