One of my favorite childhood sweets were those fig-filled bar cookies. Perfect with a glass of milk after school, I was devastated when I realized that the available gluten free options are limited - to say the least. After a long and fruitless quest for commercially produced Newton-like fig cookies, it became clear that I would have to make these babies myself to achieve the results I had been searching for - and so, I did. This is one of the best recipes around and makes for a subtly sweet fig-filled cookie pocket, perfect for kids and adults alike.
