Asparagus is ready to go in the garden. This means a LOT of asparagus all at once. If your CSA box is full of these yummy spears of delight, check out what you can do with them!
- Pickle Them! - This is my own recipe that makes the crunchiest pickles you ever tasted. It is a great way to have the kids actually beg to eat them.
- Asparagus with Proscuitto - Nothing more needs to be said here. Just sit with that title for a moment.
- Chicken and Asparagus Soup - Spring might be sunny, but there are plenty of chilly days left. Imagine this soup with a loaf of crusty bread.
- Ham and Asparagus Fritatta - This time of year is asparagus time as well as egg time. This meal is fast and easy.
- Asparagus Wrapped in Puff Pastry - A dear friend once brought this to my home for a get together. I don't think I ever made eye contact with her, because I was too busy snarfing down the treat she had on her plate.
